The wonderful Kaiserschnitzel are cut from the skin, or the emperor's part of the pig. At Fitmeat, you can get the skin without the lid so that you can cut the schnitzel yourself, or you can get ready-portioned Kaiserschnitzel.
Meat knowledge
The topside of the pig is cut from the hindquarter. The coveted imperial part comes from the inside of the leg and is divided into the cap and the rind.
Lean and delicious at the same time
In general, the topside without cap is an extremely lean, finely fibrous and evenly textured cut.
It contains very little fat and linseed and should therefore be cooked only briefly to avoid drying out. The cap must be removed when slicing and can be used for goulash or ragout, for example.

The Topside without cap, or Kaiserschnitzel, is, as the name suggests, something very special. You could say it is the most sought-after cut of pork leg. This meat is an absolute hit, especially when it comes to making wonderfully juicy schnitzels or cordon bleu.
Lean, fine-grained and uniform in texture, these are the characteristics that best describe the Kaiserschnitzel. This makes it easy to handle and guarantees an optimal result.
Herkunft und Haltung
Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us. A requirement that is also reflected in the delicious taste.
If you compare pigs from factory farms, for example, one thing is immediately clear: due to the constant stress, the meat is much firmer, loses a lot of water when roasted and hardly has any flavour of its own.
For us at Fitmeat, this type of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.
After careful and stress-free individual slaughtering of the pigs, our butchers allow the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful meat flavour.
