Meat knowledge

The loin, or back of the pig, is a particularly fine cut. It has very little fat and is therefore on the lean side. However, this is not a problem in terms of taste - it has a fantastic flavour of its own that goes well with a variety of dishes.

It can be divided into the lean and short-fibred 'short loin' and the fatty 'long loin'. At Fitmeat you'll get a perfect loin without neck and fat, ribbed and untrimmed. 

What are the differences in cooking?

The muscle meat of the short loin is excellent for chops, but it is also ideal as a whole roast, provided the protective fat rind is present. For chops or steaks, the meat of the long loin is better. It also holds up better on the barbecue as it dries out less quickly.

However, due to the significantly lower fat content, care must be taken when frying or grilling. When sliced into steaks, the meat should not be cut too thin - otherwise it may dry out.

Pork loin without neck and fat - a real delicacy

The meat comes from the hindquarters, a muscle that the pigs move very little. As a result, the meat is incredibly tender, short-fibred and lean. A wonderful meat treat that is also incredibly versatile.

It can be used in almost any dish. Whether on the barbecue or in a pan, the sky's the limit.

What makes our Fitmeat straw pigs so special?

Firstly, the breed of the pigs themselves. Our premium loins come from Austrian Gustino straw pigs. They have a really good life on an idyllic family farm. With spacious stalls and comfortable resting areas with straw bedding.

They grow up in small groups, have plenty of room to play and roam, can cuddle in the straw and just feel super comfortable. Slaughter takes place either on the farm or at a nearby butchery or abattoir. This minimises the stress on the animals and the quality of the meat is correspondingly high.

We recommend one kilogram for three to four people.

Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us. A requirement that is also reflected in the delicious taste.

If you compare pigs from factory farms, for example, one thing is immediately clear: due to the constant stress, the meat is much firmer, loses a lot of water when roasted and hardly has any flavour of its own.

For us at Fitmeat, this type of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.

After careful and stress-free individual slaughtering of the pigs, our butchers allow the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful meat flavour.
