Meat knowledge
The fillet from the loin, lean from the Austrian straw pig, is particularly juicy and lean. Like the classic loin, the delicious meat is taken from the back of the pig. However, in this case the meat is completely free of bones, tendons and fat.
. In Germany, loin is also known as lachs ham.
This makes it ideal for pan-frying or grilling. Roasted whole and then cut into fine slices, it is an incredible treat that does not require much fat.
What makes our tenderloin so special?
First of all, the breed of the pigs themselves. Because our premium loins come from Austrian Gustino straw pigs. They have a really good life on an idyllic family farm. With spacious stalls and cosy resting areas with straw bedding.
They grow up in small groups, have plenty of room to play and roam, can cuddle in the straw and just feel super comfortable. Slaughter takes place either on the farm or at a nearby butchery or abattoir. This minimises the stress on the animals and the quality of the meat is correspondingly high.
Quantity per person
We recommend one kilogram of Karree Rose for three to four people.
Herkunft und Haltung
Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us. A requirement that is also reflected in the delicious taste.
If you compare pigs from factory farms, for example, one thing is immediately clear: due to the constant stress, the meat is much firmer, loses a lot of water when roasted and hardly has any flavour of its own.
For us at Fitmeat, this type of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.
After careful and stress-free individual slaughtering of the pigs, our butchers allow the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful meat flavour.
