Not all bacon is the same. Anyone who has tried a few different types knows this. After all, in order for traditional bacon to be really tender and flavourful, it requires not only the highest level of expertise, but above all patience and a sure instinct. The path to savoury, smoky pancetta is quite a complex one.
Pancetta: a delicacy, smoked over beechwood
First and foremost, of course, you need the best ingredients and high-quality meat. That's why our master butcher only uses meat from Austrian straw pigs/bio pigs from the lake region in the Salzkammergut.
This is followed by the traditional method of salting the pork belly by hand and refining it with fine spices. Smoked over beechwood and matured for twelve weeks, it develops its full flavour and becomes a succulent, tender treat.

With its spicy, smoky flavour, our pancetta is probably one of the best delicacies that can end up on a juicy farmer's bread. But it is also the perfect choice for savoury dishes such as pork fillet wrapped in bacon.
